Easy 15 Minute Green Curry/Pad Thai

I love spicy food and I think my favourite mid week comfort meal is a delicious Thai green curry. Sometimes though it gets a bit heavy with the oil and lots of rice so I found a way to make a light version that can be bulked up according to your goals.

Ingredients
180g basa or firm white fish fillet, diced
1 serve Slendier noodles
1/2 zucchini, diced, and steamed
10g Thai Gourmet Green Curry paste (or any paste at about 100 calories per 100g)
Coconut oil spray
3 poppadoms (microwave)
1 egg white
Coconut oil spray

Method
(1) Cook off 180g of a firm white fish like basa in a hot wok with a little bit of oil (I used coconut oil spray and it stuck a little, but those flaky bits are yum).
(2) Add the Slendier Konjac noodles (find in the health food section of the supermarket, prep according to packet instructions) and cook on low for about 8 minutes occasionally flipping so they don’t stick.
(3) Remove the noodles from the heat and add green curry paste. I use Thai Gourmet because there are very few ingredients, low kilojoules, and great flavour.
(4) Cook for a minute or until fragrant then add add steamed veggies (zucchini is my favourite, but broccoli and cauliflower work too), and egg white, and the fish for a few more minutes.
(5) Once it’s ready, serve with noodles, coriander, and Patak’s microwaveable poppadoms (I know not Thai, but yum). At only 38 calories for three they have delicious crunch and feel a bit indulgent. Kept calories low so I had room for halo top after 😏 but you can add rice to this for more carbs and a bit more balance!
